These Oatmeal Cookies are really wonderful, and just perfect with a morning coffee or tea.

I love baking them on Sunday afternoon to have some for my Breakfast on Monday, and begin my week with a smile :)

Oatmeal Cranberry Cookies

This recipe is very simple and very quick : 10 minutes to prepare them, 10 minutes to cook them in the oven, and 10 minutes… to wait until they are cold enough to eat them !

Ingredients (for 12 Cookies)

  • 80 gr flour
  • 80 gr butter (salted is better)
  • 1 teaspoon baking powder (of baking soda)
  • 1/2 teaspoon of cinnamon
  • 50 gr sugar (half brown, half white is better)
  • 1 egg
  • 150 gr oats
  • 60 gr dried cranberries

Instructions

1 – Preheat the oven to 180 celsius

2 – In a bowl, cream butter and sugar until smooth. Add the egg, and the cinnamon.

3 – In a separate bowl, combine the flour and the baking powder.

4 – Gently stir the flour mix into the butter mix.

5 – Add the oats and the dried cranberries.

6 – Roll the dough into balls and place them on cooking sheets.

7 – Bake the cookies for 10 minutes (They have to be lightly browned but still soft in center)

8 – Let cool on the cookies for a few minutes on a grill before… eat them !
