Cornbread Jamie Oliver - Blog Coffee with Clementine

It is a perfect recipe for a brunch if you have a lot of friends to come, or for a picnic, because it is also very good cold !

For this cornbread you need :

  • 2 onions, (thinly sliced)
  • 2 corns on the cob (you can also use 200 gr of corn in can)
  • 4 eggs
  • 325 g cornmeal (polenta)
  • 250 ml milk
  • 1 teaspoon baking powder
  • 6 tablespoons plain flour
  • 140 g freshly grated mature Cheddar cheese
  • 3 fresh green chillies, finely sliced
  • sea salt, freshly ground black pepper
  • butter and olive oil

Preheat your oven to 200ºC.

Fry your onions in the butter during at least 20 min. They need to be caramelised.

Get your corn ready if you chose corn on the cob : hold it on a board and run a knife from the top to the bottom (to cut all the kernels off). Add them to the pan with the onions and cook for a further 5 minutes. Then set aside (to cool down).

In a bowl, mix eggs, cornmeal, milk, baking powder, flour. Add salt and pepper, and 100 g of the cheese. Mix again. Then add the onion and corn mixture and 2 chillies.

Grease your cake tin with some olive oil. Line the base with greaseproof paper, and pour in your mixture.

Add the last sliced chilli on top, and put in the oven for 35 minutes. 10 minutes before the end, add the remaining cheese.

Once baked, let it cool for 15 minutes, before serving.
